Yes, people eat turkey eggs. They are a bit thick yolked like a goose/duck 
egg but the white is just like a chicken egg. You need to add a bit more 
water to them if you want them scrambled. They make nice flans and custards, 
but you may have trouble whipping the whites to stiff peaks. Duck eggs are 
very hard to whip to stiff peaks. I like turkey eggs in omeletes. One good 
sized turkey egg is all you need!

Turkeys are not as reliable as chickens when it comes to laying though and 
it takes them a few days longer to hatch out the clutch. Therefore, they are 
often used more as a 'meat bird' than as a laying bird. A turkey hen may lay 
an average of one egg every two days while a chicken may lay an egg a day 
during season.

Modern domesticated turkeys are some of the stupidest birds I have ever 
encountered. I knew a hen who never made a nest. She just laid her eggs in 
the middle of a sloping lawn. The eggs rolled downhill every day. After a 
few weeks of this, she decided to set....right in the middle of the lawn. We 
shoved a few eggs under her and built her a nest as we couldn't convince her 
to sit anywhere else. We even mowed the lawn around her. Eventually, she 
hatched out 8 out of 12 eggs. I assure you, wild turkeys are a bit more 
intelligent. Just don't park a powder blue volkswagon bug near the males or 
they will try to mount it. For hours. Sliding down the back. Its actually 
very entertaining.
