As for sites, I would look at the histories of a particular area to see what 
is known about the early history of the older church buildings there.  Is 
there a particular area you are looking for information on?  Europe is a big 
place.

As for ceremonies, I doubt you'll find any.  Aside from a few customs 
decorating with Holly at Christmas time, etc, there aren't really any pagan 
"ceremonies" that survived.
