CervantesVirtual (http://www.cervantesvirtual.com) hosts the "Manual de
mugeres," which is a 16th century Spanish cookbook (as mentioned, I
will probably get my translation of this cookbook posted -- if I can't
get my spiffy personal domain back, I'll probably squeeze it onto my
Geocities page).  While not strictly a foodie cookbook (its focus is on
cosmetics and remedies) it does feature some interesting cuisine
recipes -- a Moorish stew, a hardtack-biscuit, hippocras, "chorizo"
sausages, and so on.

Ruperto de Nola's "Libro de Cozina" (aka "Libre de Coch") would be
another book on Iberian cookery to look out for.  You can find an

In terms of Italian cuisine ... while it is late 15th century, and not
16th century, you may find the recipes in Platina's "De honesta
voluptate" to your liking.  Some of the recipes from Platina are
available in Cariadoc's Miscellany

If you are looking for other recipes in general, you may want to start
