Beignet is French for "fritter".  They are also known as "Creole 
Doughnuts".  The dough consists of flour, fat, sugar, salt, milk, water, 
eggs, and yeast.  (They don't rise, but the yeast makes a more tender dough 
than you use for the Mexican version, the _sopapilla_.)  You roll it out 
flat, smite it into gobbets, and deep fry until they pop and turn gold. 
 Drain, and serve with syrup or, in the Cafe/ du Monde method, dust thickly 
with powdered sugar.  Consume, preferably while wearing a bib....
